SpamAssassin examines the header and the body of each message, gives it a spam score and then proceeds in accordance with the level that you have selected. Every email account can have a different setting and you can choose if the emails that the anti-spam filter labels as spam should be deleted or redirected to some other email account where you can read them at a later time, so as to avoid deleting an authentic email. Switching to a different level or disabling the protection is also very easy.
